 The only dish I've heard described as particularly Uzbek is the shredded carrot salad sometimes called Tashkent salad. As a strange counterpoint to your observation that Uzbekistan restaurant seems to be run by Russians, I think Russian Tea Time, the fancy Russian place downtown, is owned by Uzbeks. They have Tashkent salad on the menu as well as other central asian dishes, and I seem to recall some short history or intro on their menu, or maybe a conversation with the waiter, which gave me the impression they were Uzbekistani Jews. Wonderful lamb chops in any case (marinated in cranberry juice, with pomegranate sauce?).
